Efficient lunch buffet concept for catering for 1400 participants during their lunch break
The Baugrundtagung of the German Society of Geotechnics e.V. (DGGT) is a top-class conference that brings together 1400 experts and experts from the field of geotechnical engineering at the RheinMain CongressCenter Wiesbaden every two years. When selecting the trade fair catering partner, DGGT placed particular emphasis on reliability, professionalism and a smooth process so as not to jeopardize the demanding schedule of the conference and to offer participants high-quality and efficient catering. Efficient lunch buffet concept: In order to ensure that 1400 participants can eat smoothly and quickly during their lunch break, FLOW THE KITCHEN developed a highly efficient lunch buffet concept with several parallel dispensing stations and a varied range of hot and cold dishes, salads, side dishes and desserts. Clear routes and an optimized layout of the food ensured short waiting times and a smooth process.
Focus on regional & seasonal products (business lunch variant): Although the focus was on efficiency, quality and freshness were not sacrificed. FLOW THE KITCHEN integrated regional and seasonal produce into the lunch buffet to offer participants high-quality and tasty food. A “business lunch” version of the buffet was offered, which included light and digestible dishes with a focus on healthy eating to help conference participants concentrate in the afternoon.
Coffee break catering for concentration & networking: A separate catering concept was developed for the coffee breaks, which was tailored to the needs of conference participants. Several coffee stations with professional baristas ensured fast and high-quality coffee delivery. In addition, snacks and pastries were offered, which provide energy and are at the same time light and digestible. Bar tables in the break areas promoted networking and professional exchange between participants.
Taking special dietary requirements into account: FLOW THE KITCHEN ensured that the catering offer included vegetarian and vegan options as well as gluten-free and lactose-free options in order to appeal to and satisfy all participants equally. Clear food labelling and trained service staff enabled participants to find suitable options for their individual needs.
